Mushroom Risotto & Pork Tenderloin

Melt in your mouth perfectly seasoned tenderloin compliments a delicious Mushroom Risotto. All you need is one pork tenderloin and half a cup of mushrooms. A quick 30 minute meal that is sure to please!

Ingredients Needed:

1 Pork Tenderloin

3 Tbs Olive Oil (divided)

1/2 cup Mushrooms (sliced)

4 cups Water

Arborio Rice

Pairs well with a fresh savory wine


Instructions:  Preheat oven to 400 degrees.  Rinse tenderloin, pat dry, and coat with 1 Tbs of olive oil, then evenly coat with small seasoning pack. Heat a medium skillet and add remaining olive oil. Brown tenderloin on each side about 3 minutes remove from heat and place tenderloin in foil. Seal on all sides and place in cooking pan and put into the oven. Using the same skillet, add Arborio rice, large seasoning pack, and remaining olive oil. Brown rice for 2 minutes, stirring constantly. Gradually add water and mushrooms, stirring constantly.  All water will absorb. Cook for 30 minutes on medium-high heat then turn heat to low, cover, simmer for approximately 5 minutes. When rice is cooked, place on plate, remove tenderloin from oven, slice and serve with Arborio Rice.
