Citrus Rosemary Chicken & Polenta
Stone ground cheesy polenta is the foundation for a palette pleasing Citrus and Rosemary coated Chicken. Not only tasty, the meal will fill your kitchen with a delightful fragrance of spices. This dish is complete in less than 30 minutes.
1 large chicken breast
1 Tbs butter
1 Tbs olive oil
1 1/2 cup chicken broth
1/2 cup shredded mozzarella cheese
Pinch of salt (optional)
Pairs well with a Rose Wine
Instructions: Heat a medium skillet and add olive oil. Butterfly chicken breast. Coat both sides of chicken with small seasoning pack. When skillet is hot, place both chicken breasts in the skillet and cook until done, approximately 9 minutes on each side. Once finished, cover with a lid to retain heat. In a small sauce pan, add chicken broth, butter and polenta. Mix with whisk and turn heat to medium-high, stirring constantly for approximately 5-7 minutes or until it thickens. Remove from heat, add cheese and stir until melted. Slice chicken and place on top of polenta. Garnish with fresh rosemary. You can add another 1/2 cup of mozzarella for a cheesier polenta!
